Here's the vegetable dish I made this week for the first time in years, and which can be eaten as the main meal. I call it Thai Foon, and although I've made various versions (usually with fresh vegetables, but I have all these canned ones I need to use up from Don's food pantry stash), this is what I made this week:

2/3 cup raw long grain rice
4 pieces cut up crystallized ginger
dash of cinnamon
can of cut string beans
can of sliced carrots
can of peas
1 chopped spring onion (bulb and stalk)
2 strips red pepper, cut up
1 can coconut milk
2 fl. oz. hot sauce
1/3 can green chilies
15 hazel nuts
15 red grapes

Use all the liquid from the canned vegetables. Boil uncovered half an hour, then stir.

I usually boil rice in a covered pot, but with that much extra water I want it to boil off to reduce the amount of soup left over. Boiling it uncovered causes some to burn on the bottom, and to take extra time to cook the rice. But I didn't want to drain the canned vegetables. I ain't throwin' away nuthin'!

In general the Pennsylvania Dutch vegetable dishes are served simply. Most regional vegetables such as string beans, peas, carrots, asparagus, and cauliflower are served salted and covered with brown butter. Sometimes they are served with a cream or cheese sauce.
