Beef Barley soup (NY Times recipe, which means they call it easy; don't believe it)!

I made it harder on myself, decided to use Beef short ribs, which I had to debone. My 15 year old Pooch, Ozzie, sat watching carefully (he's almost deaf, doesn't see great, has a slew of other medical problems), when I was not paying that close attention to the de-boned meat, he grabbed a nice sized piece and had himself a party (he NEVER gets beef, due to those medical problems). He was so proud of himself...
