One of my Data Analyst jobs said in their background checks, they can't sound freelance jobs if I never got a 1099 or the startup never was incorporated, and that's more then half of my jobs in the last decade. I think only 3/12 startups still exist in one form or another, today. I was usually paid by normal person-to-person transfer.

Following recipes is a valuable thing to do the first time through, just to get an idea what the recipe writer intended.

One of the most ridiculous things you see on the Internet is a posted recipe, followed by comments talking about how, the first time they tried the recipe posted, they:

- Substituted chicken for the beef liver

- replaced the butter with margarine

- used catsup instead of tomato paste

...and then they comment that the result didn't really taste good, it's a terrible recipe.

@Jeff: living at my brother's place, I have to get really creative when I cook.They have no fresh veggies, or herbs, or any sauces (thankfully I brought my curries and dried ghost pepper flakes. I feel like I'm in one of those cooking show challenges for every meal. It's weird that people don't cook, and only have food delivered or eat frozen, and have white bread tastes....

I'm a big fan of improvisational cooking, but within reason. I think if you know how spices, herbs, oils work with one another and what goes with what meats, vegetables, etc., you can really do a lot with what's on hand.

@Jeff Moore: my sometimes frustration with recipes is that I invariably don't have one or more ingredients that could be considered relatively unimportant to the dish, in my opinion. But yeah, some of those substitutions you mentioned are pretty bad.

Oh sure. Once people (better cooks than I am – like the roomie I'm privileged to get a lot of meals from, my spouse Kathryn) get that feel for how it all works, their winging it tastes better than other people's not-winging-it.

But... there are definitely times when naive substitutions can eff things up. For instance, in the realm of cocktails (something I'm better at making than actual food), I've spent some time optimizing a variation on the classic Aviation which I've taken to calling the Aerodrome. In my recipe, I specify which gin is to be used (because in this context, the balance of botanicals and even somehow the apparent *texture* of Tanqueray seem to make it meld better with the rest of the drink than other gins I tried). Someone might choose to substitute a different gin without ever tasting the drink made exactly as written. That someone would be wrong.
