Good morning, @listener james! Snow is coming down pretty aggressively here in Brooklyn.

Hi Jeff. I can't stomach American football.

I'm editing a book by a longtime boxing writer and sports person. Last year was the first SB he willingly skipped. He'd gotten disgusted by the league's hypocrisy on brain injuries and the anthem, and how the Trmup chuds had battened down on the event as a Nuremberg rally.

I'd be watching if I were able to go over my dad's, but my interest, never high, is at an all-time ebb. I'll be reading one of Roxane Gay's latest instead.
Avatar Swag For Life Member 9:10am

@Doug! I recall, very early on, you heard "Tatas-Matoes" and told me to NEVER change it as the opening theme of the show. I have heeded those words.

Greetings, @Revolution Rabbit Nov63! @doctorjazz! @TDK60! I completely understand the aversion to American football, and have been trying to slowly pull myself away.

@Jeff: it comes and goes! Since I read each workday for hours anyway, there's not always steam in the engine for leisure reading. But reading non-work books helps me see edited books in the whole (or examples of poor editing, sadly) and cross-pollinates me for the work reading.

  10:15am
Dean:

Marc Rusch, one of the finest recording engineers of our time (in my humble and mostly ignorant opinion), insists on keeping the levels low, then asks that you adjust volume to the loudest moments for realistic playback. That's CIMP. "We set our levels so that the maximum signal will not overload the recorder. This means that the average level will be much lower than you are used to."--CIMP Statement of Purpose (on, I think, every record)
  10:16am
DJpeterDE:

I do love the CIMP sound
  10:20am
Dean:

Needless to say, when I visit stereo stores to "audition" gear--which I haven't done in a long time--I always bring at least one CIMP disc. Add Myra Melford Trio's Alive in the House of Saints (a superb live recording packed with dynamics) and Cecila Bartoli's recital of Italian songs with pianist András Schiff (a fairly lifeless recording in terms of engineering, but a great musical performance) and I can get a pretty good sense of how the gear will perform.
  10:23am
Dean:

"You may find passages where the signal is almost inaudible. Resist the temptation to turn the volume up; this is the way it sounded when it was recorded and was the dynamic intention of the musicians."

I'm with you on the performances, @WR, that's my main problem with music docs in general, too much talk, not enough music. I thought while they did break in on the band, they did let Kirk's solos remain mostly intact. Haven't seem them, but I think there are some concerts also on Amazon, looked like just the show.
There a Sonny Rollins doc that really let's his band play through.

Avatar 🦀 Swag For Life Member 11:13am

I'm ok with the director/ editor doing a doc edit but then give us the fill performance as extra but (another but) some footage is licensed only to be excepted but still (yet another but) they should be sure all footage extant of major figures like Kirk is made available.

QUADRUPLE IT?!!!
Avatar 🦀 Swag For Life Member 11:16am
Uncle Michael:

Well, that. But I was going to say that many things that require a lot of babysitting on the hob, require very little in a Dutch oven in the oven. You could probably stir that stuff once per hour. It won't stick and burn. I never cook beans on the stove anymore, for example.

Anyone see SNL last night? Musical guest was Phoebe Bridgers, someone I don't know. They did a pleasant enough moody-rock set, then at the end she did a Hendrix/Thompson guitar smashing on stage, which was weird. Seemed half hearted, self conscious, not the angry, screw it all move you'd think it would be.
Avatar 🦀 Swag For Life Member 11:19am
Uncle Michael:

I think feeding a guitar into a wood chipper would be a nice way to revive the novelty of instrument destruction.
  11:19am
Dean:

That's a great idea. On the stove top, yes, in a Dutch oven, I manage to set the slightest simmer. The first hour on the top is unavoidable, though: get that fond from the veggies, brown the various meats, then simmer away a cup of milk followed by a cup of wine before adding the tomatoes. I often start the whole thing with two or three anchovies, too.
  11:20am
Dean:

Set oven to...300F? 275?
  11:21am
The Rosners:

Jeff where do I sign up for the GDS email?
Avatar 🦀 Swag For Life Member 11:22am
Uncle Michael:

Yeah, you have to start these things over a flame, but the long haul is in the oven. I made my last pea soup that way. I'm usually between 300 and 325, depending if I want to cook off moisture or preserve it. On the pea soup it was still a little thin, so I turned it up from 300 to 325 towards the end. But that's pea soup, it's not possible to overcook a split pea, since breaking it down is the goal.

@doctorjazz: The funniest guitar smashing I saw was at a Acid Mothers Temple show: Makoto Kawabata smashed a guitar on the ground and threw the remains into the crowd, then got another guitar and played on. And did it again a few minutes later. Then a third time. I was on the side, so I could see he had yet another spare guitar lined up (I guess it all depends on the audience's reaction). The first one looked a bit lame to me, but the repeats were hilarious

Right, chresti. When I turned up the heat on the soup I removed the lid. I don't like to start some things uncovered. I like to see ho the evaporation is going. It's easy to add water back in, though...if it's going too fast.
