Here's how I mac n cheese. Boil pasta. Save 1 cup pasta water. Heat butter. Put pasta in butter. Add cheese and a little of the pasta water/cheese at a time and mix. Done

Also ... save chickpea water. It's called Aquafaba and it has the same protein molecules as eggs so you can make dairy free meringues and such. It's fabulous. :-)

My wife and I had just completed a minor kitchen remodel one night and broke out the wine to celebrate. Then, realizing we hadn't eaten in hours and there was an organic whole chicken that needed cooking in the fridge, we improvised the tastiest dinner cooked entirely in one cast iron dutch oven while drunk. We later wished we'd shot video of what we were doing. It was a hilarious cooking show.

I've had homemade (complicated) baked macaroni & cheese, and while it is good, it seems only marginally better than the much simpler to make macaroni & Cheez Wiz or macaroni + American cheese + splash of milk. All in 1 pot too. Could add a little paprika and/or Romano, also in the same pot; eaten from the same pot too if I'm eating it all myself. Boxed kit macaroni & cheese I just don't get; maybe it's for someplace there's a stove & water but no refrigerator, or if you just don't keep cheese around.
