a.) Not deleting the 'Classic' version - so relax...
b.) They're going back a generation on original mix elements that four-track mixdown technology didn't let them do back then. That's kewl. Also - making a Stereo presentation of the Mono mix - which was the primary one.
That's all good.

While in NOLA have a nice dinner at GW Finns (it is my favorite restaurant and the menus changes everyday and is fresh). Go to Felix for Oysters (not ACME). Acme is a tourist trap and Felix is right across the street and a local favorite. For music go to Frenchmen Street and record shop at Louisiana Music Factory (also on Frenchmen) and Euclid Records on Piety Street is also a favorite. Beignets at Cafe du Monde is always a local and tourist favorite. The drink of New Orleans is a sazerac and the Sazerac bar in the Roosevelt Hotel has the best. Pat O'Briens for Hurricanes. Parkway Tavern or Domilise for awesome poboys. Ruby Slipper for brunch has an amazing eggs cochon and pascale manale for bbq shrimp. This should be a good start! Hope it helps!

I'd recommend Confederacy of Cruisers Bike Tours (https://confederacyofcruisers.com/) - very loose, very fun. The Creole tour focuses on the neighborhoods outside of the Quarter (we were lucky and got an impromptu tour of music sites too!) Haven't done the Culinary tour but I'd have to think they show off some hidden gems.

Also, the Backstreet Cultural Museum (the website isn't great, do a Google image search instead) has got a fantastic collection of Mardi Gras Indian costumes and jazz funeral photos.
