@coelacanth the two small ones that look like tiny beads look very much herring roe, the color is the same too, the bigger thing on the left doesn't look like anything to me :0 But possibly a piece of cooked herring with some yellow color sauce???

I have a feeling this is they way they present! I'd be VERY confused if I ever have a chance to visit that restaurant, but thanks to Jesse we're all prepared now.

Yeah, I've never been there but would be surprised if they don't serve it like this? It's like if a sculptor designed foods or something, I can't image how they taste in any way from the photos

my guess is that many of these things are pretty expensive and they are one bite - and some may taste terrible even; but they've built a reputation from the fantastic presentation and certain delicacies, and much hype.
...if i found myself with $100,000,000.00 i'd go there though! (and i'd bring all of you)

I think they're all over the place, some definitely look more entre but maybe they aren't so strict with defining those things?

Scraps, the foam is just whipped juice or chocolate milk or something; but some of the other things are seriously horrible! - and some are not food at all.
... i think the staff at mugaritz spends a lot of time laughing when they create these things and imagine the patrons trying to "ooh" & "ahhh" and pretend everything's delicious!
...it's pure genius!

i'm not into ice cream but maybe 1-2X/year, but occasionally i'll have a mochi ice cream desert bestowed upon me and i will not not eat that, ever! -and it's better thawed a little.

i used to make mochi pizza by slicing the mochi into 2 very thin sheets and baking it with cheese and sauce on top. t'was truly delicious.
and my gf c.1991 made mochi "fritters" by grating it and frying it.
...usually i just bake it till it's crispy outside then stuff it with almond butter, peanut butter or tuna salad.
