fred: Yeah, kind of a downer, but the whole year has been like that. I'm glad it's been so cold and rainy though, makes it easier.

Lisboner: in New Orleans/south Louisiana, it's king cake. But Carnival/Mardi Gras isn't observed in other parts of the States, except for some parts of the Gulf coast in Mississippi and Alabama that were also French colonies. Here's some king cake porn: www.neworleans.com...

OK pals, here we go, the pancake recipe my mum (but really my grandma) sent down to generations of hungry kids in my family:



*Bonne Maman’s Depiesse’s Classic Crepes* — Thin, easy to make, delicious!

OK before we get started, we never measured anything, just ‘felt’ for the right measurements. It’s quicker but not exactly precise. So let’s do this for two people eating let’s say 3-4 pancakes each:

Ingredients
*Healthy mound of flour (200g?), enough flour to hide a child’s lego set, let’s say
* 2 eggs
* Milk (alternatives like almond or oat milk work fine, if not better)
* Water

1. Get a big mixing bowl, dump yer flour in (no need to sieve), then make a ‘crater’ in the middle
2. Crack the eggs so they land happily in the heart of the crater, or the little home you’ve scooped out for them in the flour
3. Using a fork, mix until more or less similar ‘dumpy’ consistency, doesn’t need to be perfect
4. Now to slowly add the milk until you reach a runny consistency. I prefer to add a decent amount of water also to achieve thinner crepes (this ain’t Dutch waffles, neither is it American pancakes. We’re aiming to light, thin and a big diameter, people!) My mum used a machine whisk, but it’s not necessary and you get an arm workout here for free. If you have a (manual) whisk, switch to this, but again it’s not necessary and the fork will serve you tremendously.
5. The fun part. Heat up two frying pans (always more fun with two). Get them ‘as hot as you dare’ and then slightly lower the heat while adding butter. Don’t muck about with oil, we want thick butter here. Get the surface of the pan all oozed up and ready for:
6. The first pancake. This is always unsatisfying and clumpy; the second, however, is a delight. Flip to your heart’s content. Expect perhaps a bit of smoke. Show off to everyone your beautiful wrist motion and pancake catching. You are the star.

As for toppings, Malcolm is quite right in offering Nutella as an alternative to what I consider the unbeatable plain sugar + lemon juice (from a lemon, not a bottle! C’est fou, ça!). You can even make savoury pancakes. You may roll them from one side to the other, or make fancy serviette shapes in cones, or just gobble down in its pure infinite circular form.
