quinoa i do eat occasionally, despite what i say. it is extremely nutritious. not much protein but all the nutrients it has are very easily absorbed, because it's a fruit -not a grain; so it's as easily digested as a fruit.
which also makes it excellent for people with digestive problems or allergies.

...amaranth i don't bother with!

you can also pop amaranth like popcorn. it's kind of cool -millions of tiny (~1/8") puffs but you can't eat it like popcorn.
