βrian that sounds good. my contribution to our potluck xmess gathering wasn't great. i thought it was good when i made it but overnight the rice got mushy and everything kind of melded for a just okay mush.

I've noticed many recipes call for too much water, either for brown rice or wild rice. Reduce the water, keep a lid on it, and let it steam in a low oven afterward.

i haven't measured much of anything when cooking for many years. usually i fill the water to the first index finger division while touching the top of the rice; but making 2-3 X more rice i lost my kitchen mojo.

i might use more water than some people, and i definitely cook rice longer than some people (just under an hour for short grain, my usual) and i like it every time, under normal circumstances. not hard (undercooked rice sucks and is hard to digest) not fluffy (yuck) but slightly chewy and flavorful. if it burns a wee bit on the bottom it's a special treat!

...almost the same then except you put it in the oven. the "steaming" of rice seems to be the same as the boiling of rice. once the water's soaked up it's steaming; so i'm boiling (also at the lowest the burner will go) then steaming, as well. (fair to say?)
...how does the oven technique affect it? (i understand why but i'm curious what the result is)

My family uses a semi-intelligent ("Neuro Fuzzy") rice cooker, and I had forgotten that you can make rice with just a pot. The trick is to wash it until all the rice paste is gone.

It makes the rice expand a bit, so it's chewier with the grains more distinct. I used to just steam on the stovetop, but the oven seems more even — and forgiving if I forget about it.

Rice is my favorite staple, but 25 lbs of rice would probably last me two years, and that would be w/ me eating it at least twice a week (I only eat once per day, and only small portions).
