This is what I originally wrote on WFMU's blog, and which Little Troy got so upset over:

------------

Bennie Hess's papa, Vestral (yes, Vestral!) worked on the railroad with the legendary "singing brakeman" Jimmie Rodgers, who stayed at the Hess household in Texas on occasion, enthralling young Bennie with his yodeling. (Though Hess was a first-class huckster, promoter and bullshit artist, this appears to be fact.) Handing down the love of music from father to son continued when Bennie tossed his 4-year-old son, Troy, on stage as "America's Singing Souvenir." (Hear Troy sing his breakout number: Please Don't Got Topless Mother.

My Guyanese sister-in-law's mother gave me a bunch of here amazing hot sauce at T-giving. But it only paired w/ certain foods, and it went bad this week. First time that happened to me (it was about a pint).

A local article the other day featured pork pies of French Canadian holiday tradition. I've never had one but the name alone plus descriptions and homey background & memories made a body hungreeee-desirous.
  Fri. 12/22/17 10:49am Dean:

Current hot sauces of choice for me are Bigfat's 708 and 808, and Paul's Haba Haba Mango Habanero, a suitable substitute for catsup.

The hottest chili essence I tasted was from a Mexican Vet student half a lifetime ago. Man, that was fundamental.
  Fri. 12/22/17 10:50am mauri:

I tried to get the hotness away from habaneros by rubbing slices in alcohol. trying to have just the flavor. the sauce was still hot. i didnt drink the alcohol after.
Avatar Swag For Life Member    Fri. 12/22/17 10:50am Jeff Golick:

Dean, if the 808 tag line isn't 808s and Heartburn they've missed a nice opportunity.
Avatar Swag For Life Member    Fri. 12/22/17 10:50am Webhamster Henry:

There used to be a "Hot stuff Spicy Food Store" on Sullivan St in the 90s. You could do some good taste tests. Hotter than hell sauce was a fave of mine, an Indonesian one. I also liked the jalepeño lollipops.

I was thinking of making egg nog. Don't have the time to let it age in booze, so maybe a coddling bath for safety's sake. But it occurs to me a pinch of cayenne might be a nice touch.

  Fri. 12/22/17 10:54am Dean:

Heh, turn up the 808. The whole line is -08, from not hot to (808) kaboom! Naga Jolokia. I gave my 12YO niece a taste of 708, which is hot. She liked it, so with adequate warning I offered 808. She dipped her finger and tasted a drop. Eyes grew wide. I commend her courage.

I like the pork pies from the North West of England without pastry tops. They can be a bit pastry heavy.

Hot peppers need to be approached gently, with the heat level providing a high note in the food's flavor, not a shrapnel wound. But with no heat at all, it's like listening to an orchestra with no high notes.

Avatar Swag For Life Member    Fri. 12/22/17 10:57am Brian in UK:

The heat should be a subtle use not a smack in the chops. Italians use Chili well as a warming heat under the main flavours.

@annie: I add various chilies (dried chiplotles and others for spice, and fire-burned poblanos for flacor). I also use a cumin and a wee bit of coriander, and agave syrup for the sweetness. Otherwise, it's the usual.

  Fri. 12/22/17 11:03am Dean:

The thing with Bigfats is the melding of flavor and sheer, nearly brutal heat. For flavor appropriate to many dishes, 708 is the go-to. One adds 808 for a layer of smoke and Scoville ecstasys.

In Greenwich a couple years ago, stopped at more-than-century-old Goddard's (I think) for what seemed like the perfect spot for the most delicious simple hearty comfort-classic beef pie and mash. The lunch was so surprisingly and discouragingly bland. I oughta write the queen.

Here is what I wrote about this record in my Best of 2003 list:

"Cram a jazz musician in a studio with an authentic African folk ensemble, and what's the typical result? Ersatz "world jazz" suitable for serenading Banana Republic shoppers, and little else. I usually avoid records like this and would have but for the presence of trombonist Roswell Rudd. With his hallmark speaking-through-the-horn sound, he blurts out his thoughts as if skanked up on truth serum. Overlooked and underappreciated, Rudd has appeared on precious few recordings. This one, as Rudd fans would expect, is magnificent."
