Why didn't anyone tell me about making a roux in the oven in the first place? I think of all the times I burned it on the stove top.

One time, I actually made a large amount on the stovetop, and it was just brown enough to taste like toast, and not burnt. So all that i did not use, I froze. And for years, I had a frozen block in my freezer that I would chip a chunk from whenever I wanted to make a gumbo. Once it was finished, I failed in my next few attempts and never made a gumbo again.

Oven roux? Maybe there is now hope again!

@ βrian: Yes, but depending on the heat, it might be 7 minutes, or 9 minutes and 3 seconds, and if you look away for a few seconds at the wrong time, then oops! Ruined again!. But in the oven, I would assume, that the process is much slower, so the margin of error is larger, thus reducing the risk.

I assumed that βrian was referring to a stove-top roux in the skillet, when he stated the shorter times. I don't recall how long that took, but I just recall that often it became tedious, and my attention would be divided, then I would cook it a minute too long and ruin it.

The oven method sounds much safer and without such a potential to burn it by mistake.

Too bad MLB doesn't have to add a "Ties" column next to wins and losses. The players' stats count but the tie is not part of the teams' final record.

Rule 7.02(a)(6)



A game shall become a suspended game that must be completed at a future date if the game is terminated . . . [and i]t is a regulation game that is called with the score tied;

Rule 7.02(b)(4)



Any suspended game that has progressed far enough to become a regulation game, but which has not been completed prior to the last scheduled game between the two teams during the championship season shall become a called game [and i]f the score is tied, the game shall be declared a “tie game” (unless the game is called while an inning is in progress and before the inning is completed, and the visiting team has scored one or more runs to tie the game, and the home team has not retied the game, in which case the score upon the completion of the last full inning shall stand . . . .
