@P-90:Yes, “Shake Shack” is the closest to “In-N-Out” but still, that is on the rare/artisanal side. I like them but burger places in California are just so consistently good. In contrast just fast food dreck here.

@glenn: well, it was a documentary series focusing on different food-related things. That time it was Fairmount Bagels, and transporting them to NYC daily. I seem to remember someone like Bourdain talking about how superior Montreal bagels were to NYC ones, which pained him.

Also I think the issue is not just the water, but the flour used in dough nowadays. Unless you go out of your way for better quality flour, every place in NYC nowadays uses sacks of Pillsbury crap. No disrespect to that paunchy little Doughboy, but man… That stuff is like just so close to pure sugar nowadays.
