@glenn: well, it was a documentary series focusing on different food-related things. That time it was Fairmount Bagels, and transporting them to NYC daily. I seem to remember someone like Bourdain talking about how superior Montreal bagels were to NYC ones, which pained him.

Also I think the issue is not just the water, but the flour used in dough nowadays. Unless you go out of your way for better quality flour, every place in NYC nowadays uses sacks of Pillsbury crap.
