Good Morning Doug and other GTDS streamers!
A few weeks ago, a friend of mine gave me the djembe I was tending for him. It's a one-off, handmade for him by Gordie Ryan and Babatunde Olatunji in New York City, 1989, marked with their trademark "Qalb" which means "heart".

So, someone gave me the drum.

Avatar Swag For Life Member    Fri. 11/21/14 11:40am Brian in UK:

It's all in the proving.
Sounds like a gospel title.
Avatar Fri. 11/21/14 11:41am βrian:

Once or twice a year we travel to Michigan to stock up on frozen blobs of naturally leavened pizza dough. Why we can't find it here in WI, I don't know.
Avatar Fri. 11/21/14 11:41am Doug Schulkind:

I am now making my own pizza dough. It is freakin easy (evidenced by the fact that I am doing it).
Avatar Swag For Life Member    Fri. 11/21/14 11:43am Brian in UK:

@Dean I stand corrected by Dough Boy Doug.
Avatar Swag For Life Member Fri. 11/21/14 11:43am Cecile:

I did that a lot in the past. It is easy. And you can morph it into focaccia as well. But with work and school, I swing by the store. It's $2, what the hell.
Avatar Swag For Life Member    Fri. 11/21/14 11:43am Brian in UK:

Doug it's great to feel kneaded.
  Fri. 11/21/14 11:43am Mr C:

forgot about LPH...thanks
  Fri. 11/21/14 11:44am Dean:

"Focaccia." Watch your language.
Avatar Swag For Life Member Fri. 11/21/14 11:44am Cecile:

Brian, where do you find that pizza dough?
Avatar Fri. 11/21/14 11:45am βrian:

We have had some luck with the no-knead pizza recipe, but it requires advance planning.
Avatar Swag For Life Member Fri. 11/21/14 11:45am Cecile:

yeah, I want to try that one someday.
Avatar Swag For Life Member    Fri. 11/21/14 11:46am Brian in UK:

Cecile I am lazy just mix it all up in the bread machine then let it prove.
Avatar Swag For Life Member Fri. 11/21/14 11:46am Carmichael:

No need to knead?!
Avatar Fri. 11/21/14 11:46am βrian:

@Cecile: Mill Pond bakery in Chelsea.
Avatar Swag For Life Member Fri. 11/21/14 11:47am Cecile:

Oooooh, I gotta get there. That's near Ann Arbor. Haven't been there in 7+ years...
Avatar Swag For Life Member    Fri. 11/21/14 11:48am Uncle Michael:

Will you please all join me in the next room for Fresca and Cheezits?
Avatar Swag For Life Member    Fri. 11/21/14 11:48am Brian in UK:

'00' flour
olive oil
Avatar Swag For Life Member Fri. 11/21/14 11:48am Cecile:

Carm, that's right. You let it rise for a very long time, and it somehow magically develops nice gluten. It's kind of amazing.
Avatar Fri. 11/21/14 11:48am βrian:

They used to always be at the AA Farmer's Market. Not sure if that's still so.
Avatar Swag For Life Member Fri. 11/21/14 11:48am Cecile:

I'll have to watch to for it if/when I get back there.
Avatar Fri. 11/21/14 11:50am βrian:

Say it again: "Nice gluten! Nice gluten!"
Avatar Swag For Life Member    Fri. 11/21/14 11:50am Brian in UK:

I have had carpel tunnel ops in both hands and do not appreciate kneading and lots of clapping at gigs. The Blind Boys of Alabama did me in for Twenty Four hours.
Avatar Swag For Life Member Fri. 11/21/14 11:51am Cecile:

you will like the no-knead recipes then, Brian.
Avatar Fri. 11/21/14 11:51am Doug Schulkind:

2 cups warm water
1 Tbsp milk
2 tsp yeast

mix until yeast is not clumpy

2 cups flour
1 tsp salt
2 Tbsp olive oil

Mix until a sticky gooey mess. Transfer to a floured smooth surface. Fold it over and over and over on itself for about a minute or two. Put in a lightly oiled bowl and cover with a tea towel. In about an hour or so, punch down the dough, fold it over and re-cover with the towel. In another hour, roll that sucker out and cover it with all manner of yummy and bake at 475°F until the cheese is bubbly and beginning to brown.

There, because I love you.
Avatar Swag For Life Member    Fri. 11/21/14 11:52am Brian in UK:

I loves the bread machine, Cecile.
Avatar Swag For Life Member Fri. 11/21/14 11:53am Cecile:

I bet you do Brian!
I got a Kitchen Aid mixer with a dough hook when my hands were really bad with carpal tunnel syndrome.
Avatar Swag For Life Member    Fri. 11/21/14 11:56am Brian in UK:

I loved it when Kid Koala brought out his Carpel Tunnel Syndrome album. That man has a great sense of humour. Well he is Canadian!!
Avatar Fri. 11/21/14 11:56am Doug Schulkind:

There will be no Give the Drummer Some or Hinky Dinky Time radio shows next Friday.

But there will be a Hinky Dinky Time show coming up next:
  Fri. 11/21/14 11:56am Dean:

Inspiring dough talk here. Sticky gooey is essential. You don't want doughy dough. But I'm telling you, add some honey or molasses. And the prosciutto and leek component? How does that go?
Avatar Fri. 11/21/14 11:56am ndbob:

excellent show Doug!
Avatar Swag For Life Member    Fri. 11/21/14 11:57am Brian in UK:

Have a great weekend everyone. Happy pizzering.
Avatar Fri. 11/21/14 11:57am βrian:

Not to brag, but during the colder months we get *free* home delivery of brick-oven-baked naturally leavened whole-grain bread. It's the best bread ever, but they don't sell dough. In fact, the bread pail is waiting on the porch right now ...
Avatar Swag For Life Member Fri. 11/21/14 11:57am Cecile:

I like a leaner dough. Very little sugar, just oil, flour and yeast.

you too, Brian!
Avatar Fri. 11/21/14 11:57am Doug Schulkind:

So, which speed did you like the playlist-page drummer, slow, medium or fast?
Avatar Swag For Life Member Fri. 11/21/14 11:58am Cecile:

oh, Brian that is awesome.
Avatar Swag For Life Member    Fri. 11/21/14 11:58am Brian in UK:

Verbing the noun, βrian?
Avatar Swag For Life Member    Fri. 11/21/14 11:58am Uncle Michael:

I'm drummer-speed agnostic.
Avatar Swag For Life Member    Fri. 11/21/14 11:59am Uncle Michael:

See you all shortly!
Avatar Swag For Life Member Fri. 11/21/14 12:00pm Jesse K:

thanks for the morning soundtrack Doug!
Avatar Fri. 11/21/14 12:00pm βrian:

Jamais !

Avatar Fri. 11/21/14 12:01pm Jeff Golick:

Mercy merci mery.
Avatar Swag For Life Member Fri. 11/21/14 12:01pm Parq:

Nicely done; thanks, Doug. That conga GIF is still silly. See you in Uncle Mike's rec room, all.
Avatar Fri. 11/21/14 12:05pm Doug Schulkind:

That was big fun! See you Tuesday evening at six, but not next Friday...
Avatar Mon. 12/1/14 2:58pm bobdc:

A little behind on my listening: great show! I kept waiting for you to start talking during "Money is the Root of All Evil" because it definitely has a GTDS talkover groove to it.
Avatar Mon. 12/1/14 3:00pm Doug Schulkind:

Hey bobdc!
I will re-listen to that with an ear toward music bedding.
