Annie, I'm not aware of any substitute for curry (kari) leaves. Might be better to leave them out instead of trying using something to replace them.

I keep a couple of large bags of them in my freezer. You can find dried ones in Indian groceries out of season, but they don't come close to the fresh ones in flavor. Still, better than nothing.

My previous attempts to grow kari plants from seedlings (from a Queens nursery, if I remember correctly) were not successful. Those with a green thumb might fare better.

Remember, you can't spell asafetida without "fetid."

A friend brought me a big tarry ball of local asafoetida from her family village in India. (It's free of both organic cat drool and local non-free-range grade-X honey, I'm happy to say.) I'm still chipping away at it. A little goes a long way - most recipes require no more than 1/8 tsp.

As Azam says, you can use bay leaves in place of curry leaves. They won't substitute exactly, but they do add a good flavor of their own.
